A parent gifts money e200k in this case to their daughter to pay off her mortgage which is in joint names with her husband (their son in law). Is the son in law deemed to get a gift of e100k from his parents in law (gift splitting?).

I don’t think so. The parents are giving the money to her not to him.
If in doubt send an email to the query management officer in Revenue technical services for the area of the taxpayer.
